Healthy Veggies Plus
Saute 1 onion, medium dice, in olive oil till soft. Add 2-3 C medium diced veggies (Trader Joe’s has a nice combination of broccoli, carrot, radish, green bell pepper, celery, jicama, red cabbage and green cabbage; buy it or make your own.) and saute for a few minutes until veggies aren’t raw but are still crunchy, to taste. Add a sauce of well-combined and smooth ¼ C tahini, 4 tsp cold water, 1 Tbsp Dijon mustard, 1 Tbsp maple syrup, 1 Tbsp soy sauce. Serve warm or room temperature. Rochester's Climate Strike March, 9/27/19. Starts at 3:30 at City Hall, 30 Church St. and ends at the Federal Building, nearby, making a circle route. The two stops in between are the County Office Building and RG&E, I'm not sure in which order. Weather forecast is for a sunny 75 degrees! RAICA will have a banner. See you there.
