OK here is my first post. Pulled this out of the cupboard and don't know why but the tip is rotting. I store it in a cool dry place. My guess is that I washed it and put it in there a little wet? Won't do that again. It's also in a wire basket with other potatoes and was on the bottom so it went unnoticed.
I cut away the bad part and composted it. Then tried to make something right away to use it up. I COULD have just microwaved it and put it in the fridge to buy a few days but I thought that sweet potato chips sounded more fun. So I cut them super thin and put them into the oven at 400.
BUT, I was running around like a chicken with my head cut off and left them in too long (no timer set) and burned about 1/3 of them! Epic FAIL
Next time I will slow down. If I don't have time to cook then just do something simple. If I had microwaved or just baked the sweet potato then I could have stashed it in the freezer. My sister got me this great thing called Yonanas that makes "nice cream" out of all sorts of things and there is a recipe for sweet potato ice cream! Sounds weird but I'd give it a try.
Also, I realized that I had SO many sweet potatoes in the house because I went a little crazy when I went to Lori's (I am usually a Wegman's girl) and saw SO many varieties of sweet potatoes. I HAD to buy a few of EACH. But I didn't have a plan for how to use them. So, life got busy and my sweet potato got squishy.
Main take aways, buy with a plan, keep it simple, pay attention and FREEZE if you are in a bind.
